Bacon is meat candy. I love it. As for rutabagas - I think on my plan it is listed as too high carb, but I do have a recipe for rutabaga hash browns...I'd try it and see how my body handles it.

I just made this today, I am really like this recipe. It is raining outside and cold, and I have this lovely salad and a hotdog, it is like a picnic in the house. I used ham and black olives in mine. Very good, very easy.

I cut them up like fries, then spread them out on a parchment paper lined baking sheet, dot them with butter and pop them in the oven until they're cooked and browning. I turn them over once to get them browned on both sides -- very good!

Just made it, love it.

My variation to the cauliflower, mayo, onion and eggs :
dry mustard powder, instead of mustard
add a packet of sweetener because I'm used to Miracle whip
no pickles
white vinegar
paprika
celery diced
zucchini diced
red peppers diced

This is how I made it in the end, because I didn't have relish/pickle:

head cooked cauliflower chopped into bite-sized pieces
3 boiled eggs
1/2 onion, chopped
some red pepper in cubes (optional)
some cucumber in cubes (optional)
4 rashers of smoked bacon, cooked & chopped

Dressing:
mayo (I mix it with cream or cream cheese plus water so it's not sickly)
1/2 tsp or more of mustard

Sooooo good!

Hi there! No peeling required, the red will fade as well as the spiceyness as they cook. I tried this with a Daikon radish shreded and fried in coconut oil this week and it was just like hashbrowns

I've been searching for some new summer recipes to try and there are some good ones in this thread. Can't wait to try them. Dh will particularly like the cauli salad.

Think it would be okay to use frozen cauli? If so I've got everything to make this for dinner tonight. We're going to grill and if I got this in the fridge soon it would make the perfect side dish.

...if not I'll have to wait till I can get to the store.

oh yes.. just thaw, squeeze out as much water out of it, and use..
because it was frozen, it doesn't take much cooking because it's all ready soft.

add some roast pork belly and you have a most sensational meal!

Here is the cauli salad I make...it's amazing! It's from the recipe website of someone who was a member of a forum like this when I did low carb a few years ago.



Cauliflower Salad

Small-medium fresh cauliflower, about 21 ounces trimmed
1 cup celery, chopped, about 2 large stalks, 5 1/4 ounces
1 cup red onion, chopped, about 4 ounces or one small-medium onion
1 cup mayonnaise
2 tablespoons cider vinegar
1 teaspoon salt
1 teaspoon granular Splenda
1/4 teaspoon pepper
4 hard boiled eggs
Cut the cauliflower into bite-size pieces and place in a large casserole. Add 1 tablespoon water; cover and microwave on HIGH about 6-7 minutes, stirring after half the time. Let stand, covered, 5 minutes then drain and return the cauliflower to the casserole. I recommend chilling the cauliflower until it's at least lukewarm before adding the remaining ingredients. Stir in the celery and onions.
In a small bowl, mix all of the remaining ingredients except the eggs; pour over cauliflower and mix well. Peel and cut the eggs into large chunks. Gently stir into the salad so you don't break up the yolks too much. Chill well before serving.
Makes 10 servings, about 4 ounces or 3/4 cup each

YES, it DOES!

So I used the frozen cauli. It was easy not to have to cut or cook it. I added what I had on hand - 3 boiled eggs, black olives, white onion, mayo, mustard, salt, pepper, sf sweet relish. It is surprisingly good and dh likes it! We agree that something is missing, but not sure what. Maybe a diced dill pickle spear?

Anyway, I am looking forward to making it again using purple onions and adding green olives, celery and green or red bell peppers. I'll be trying it with the radishes as well, but I really like how easy it was to use the frozen cauli and not having to cook anything.

This is going to be a staple to go with all the grilled meats we do during the summer. Thanks everyone!
