Default TVP Hot Cereal

This is based on the TVP Oatmeal recipe floating around the web but I do it a bit different. The main difference is that I grind my tvp in a food processor until it resembles rough flour. It makes for a smoother "cereal" with a texture closer to Cream of Wheat. I find it has virtually none of that soy taste this way.

Basic Recipe:
1C tvp, ground to desired consistency
4c liquid*
2 scoops vanilla Whey Protein powder dissolved in whatever liquid you use
2 eggs, beaten
pinch of salt
cinnamon
1/2 tsp vanilla extract
optional: flavor drops (I like pecan praline), ground flaxseed

Combine the above and let sit over night covered in the fridge (optional but I find it melds the flavors nicely). It will be a very thin liquid, thinner than a smoothie. Microwave on high for about 6 minutes. Whisk well. Add more liquid if desired. This makes four servings for me.

*for liquid I do 2c water and 2c of a few different things depending on my mood or what I have on hand. Like sugar free vanilla soymilk, coconut milk, or lowcarb milk (calorie countdown). Sometimes I'll add some half and half too if I feel indulgent.

Depending on what liquid you use there are about 7g of carbs per serving. It makes a nice size breakfast. Adding 2 T flaxseed adds one more carb gram but it's so healthy it's worth it.

Before eating I'll add a 1/2 to 1T of light Smart Balance for a bit more healthy fat.

*ETA: removed a second cooking time, got recipes mixed up lol

I just bought a can of TVP from Honeyvilllegrains.com. Never used the stuff before. I'm looking forward to trying this! Thanks for sharing here.
