Default Nectarine Pancakes

I tweaked a recipe off Jennifer Eloff's site (Donna's Pancakes) this morning to come up with a fruit version. Made a few changes, deleted oil, added Carbquick, oat fiber, fruit and cinnamon. These pancakes came out real good. Three filled up my hubby; two filled me up. The 4 leftover ones I may serve as a dessert with sweetened whipped cream on top.

NECTARINE PANCAKES

INGREDIENTS:

¼ c. heavy cream
¼ c. water
6 drops liquid sweetener (I used EZsweets)
3 beaten eggs
¼ tsp. vanilla extract (or peach, if you have it)
½ c. Carbquick bake mix
½ c. Jennifer Eloff’s Splendid Gluten Free bake mix: http://low-carb-news.blogspot.com/2...y-splendid.html
2 tsp. baking powder
2 tsp. oat fiber (not oat bran or oat flour!)
½ tsp. cinnamon
1 2½” nectarine, peeled and chopped fine

DIRECTIONS: Beat eggs in a medium bowl. Add milk, cream, sweetener and vanilla. Add bake mixes, cinnamon, salt, baking powder and oat fiber. Stir until batter is smooth. Add fruit and stir well. Heat non-stick (or oiled) griddle. Using a ¼c. measuring cup, dip up into nine 4″ pancakes. Allow to brown and rise on one side and flip to brown on second side. Serve hot with butter and syrup of whipped cream topping.

NUTRITIONAL INFO: Makes 9 pancakes, each contains:

78.90 calories
5.51 g fat
7.16 g carbs, 3.48 g fiber, 3.68 NET CARBS
6.2 g protein
150 mg sodium
10% RDA Vitamin B12, 10% iron, 9% calcium and 20% phosphorous

Default Blueberry Pancakes

This was my Christmas morning breakfast today. Came out real good, too. Thought I'd share this recipe. They are pictured here:

BLUEBERRY PANCAKES:

INGREDIENTS:

3 eggs, beaten
¼ c. heavy cream
¼ c. water
¼ tsp. vanilla extract
6 drops liquid sweetener (I use EZSweets)
½ c. Carbquick bake mix
½ c. Jennifer Eloff’s Splendid Gluten-Free bake mix: http://low-carb-news.blogspot.com/2...y-splendid.html
2 tsp. baking powder
2 tsp. oat fiber (not oat bran or oat flour!)
1 T. flax meal (I use the golden flax for this)
3/4 c. small, wild frozen blueberries (I use Wyman’s)

DIRECTIONS: Beat eggs in a medium mixing bowl. Add cream, water, sweetener and vanilla. Stir well. Add all dry ingredients. Gently fold in berries and let batter sit a bit while griddle is heating on medium-high heat. Oil griddle with your preferred oil. Using a ¼ c. measuring cup, dip batter onto greased griddle. When 1st side is brown, flip over and brown 2nd side. This batter will make eight 4-4½” pancakes. Top with sugar-free blueberry syrup.

NUTRITIONAL INFO: Makes 8 pancakes, each contains:

92.63 calories
6.94 g fat
8.83 g carbs, 5.09 g fiber, 3.74 NET CARBS
7.38 g protein
51 mg potassium
202 mg sodium
11% RDA Vitamin B12, 9% calcium, 9% iron, 10% phosphorous, 11% selenium

Default Peggy's Fluffy Pancakes

It's what I had for breakfast today. It's basically my Blueberry Pancake recipe minus the blueberries. This is now my go to pancake recipe. Even my husband says this taste and cook up just like the real Mccoy. These rise nicely and come out light and fluffy, hence their name. This recipe is not suitable until you reach the grains rung of Atkins OWL phase.

INGREDIENTS:

3 eggs, beaten
¼ c. cream
¼ c. water
¼ tsp. vanilla extract (optional)
6 drops EzSweets (small bottle) liquid sucralose
½ c. Carbquick bake mix
½ c. Jennifer Eloff’s Splendid Gluten-Free Bake mix
2 tsp. baking powder
2 tsp. oat fiber
1 T. flax meal

DIRECTIONS: Measure and mix well all dry ingredients in a medium bowl. Beat in eggs and other liquid ingredients. Dip by ¼ c. scoops onto heated, oiled hot griddle or skillet. When bubbles form on top, flip and brown second side. I get seven 3-4″ pancakes out of this batter. Serve with your favorite sugar-free maple syrup (I use Cary’s).

NUTRITIONAL INFO: Makes 7 medium pancakes, each contains:

95 calories
7.24 g fat
9.44 g carbs, 6.73 g fiber, 2.71 NET CARBS
7.74 g protein
174 mg sodium
484 mg potassium
26% RDA phosphorous

JEN ELOFF'S BAKE MIX:
1 2/3 cups almond flour
3/4 cup gluten-free oat flour
2 tbsp coconut flour
3/4 tsp. xanthan gum

I have a number of pancake recipes on my site but this is the best LC pancake I've come up with to date. It's my go to recipe now and I just add berries and flavorings to this basic batter.

I thought flax was a grain.. Surely it isn't suitable for induction?

Flax is not a grain, it is a seed. It IS suitable for Induction. Carbquick has flour product in it, so that is why these are not suitable until the grains rung of OWL.

Do you have any without carbquick? I can't have gluten and so many of your recipes look so good, but many of them have carbquick.

Thanks for that, Peggy. That's good to know. I have some in the house I'd prefer to use up, but thought I couldn't have it till I was on pre-maintenance.
