Candice's Low Carb Coconut Stack
(1 serving)

I don't do many of these kind of recipes, 1 serving size. But I was craving something chocolate and did not want to end up with lots left over. So that is why the individual serving size.

This is a pretty basic recipe. I'm sure there are many out there on the low carb forums. This is just my version I came up right now. It's quick, easy to make and most important is yummy.

Recipe can be adjust to make more then 1 serving if you want.

Ingredients:

1 Tablespoons unsweetened shredded coconut
2 teaspoons(10g) unsalted butter
2-4 drops liquid Sucralose (I use EZ-Sweetz)
2 teaspoons unsweetened cocoa(I use dutch process)

Instructions:

Put butter in a small dish. Melt in microwave.
Stir in cocoa & liquid sucralose. Mix until smooth.
Lastly stir in your coconut.

Drop mixture on a piece of parchment or a dish. Place in freezer for a few minutes until set up.

Nutritional information for whole recipe:

Energy 132 kcal
Carbohydrate, Total 4.15 g
Sugars, total 0.51 g
Fiber, total dietary 2.31 g
Protein 1.24 g
Total lipid (fat) 12.26 g
NET CARBS 1.84

Yum.

I just made two. Gave one to my dd. She wasn't impressed due to the fact that the butter wasn't quite blended in so she had a hunk of butter in her mouth. Think I will try again with coconut oil.

Thanks. I am always looking for recipes that are for one or two servings at the most otherwise I eat til I am sick. Portion control issues.

Double yum! I made mine w/ tbsp CO instead of butter and a few drops of vanilla. Definitely hit the spot.

I tried a bit of erithrytol in it & 1 drop sucralose - the e precipitated... Even that tasted good, but wasn't the idea! Trying to learn where I can use the darned stuff to it's advantage (I don't bake much).

I've made these several times before your posts, but I added coconut oil with the butter and some almond pieces. Oh it is so good. I just had one from my freezer that I made last night.
My butter melts with the coconut oil. By the way, is it okay to melt coconut oil in the microwave? The bottle I bought mine in is so difficult to melt in under water. I will admit, yours looks chocolatety.
