Candice's Low Carb Apple Cinnamon pancake

I came up with this recipe this evening because my son was asking for cinnamon apples and pancakes. So I served them together.
Most of it was eaten by him but I did taste a few bites and I have to say it was so good! I eat an apple almost everyday so I will definitely be making this again for me!

And please excuse my melted whipped cream in the picture

Hope you enjoy!


1 serving


Ingredients:

1/2 small apple(about 1.5oz)
1 Tablespoon Coconut flour, sifted
1/4 teaspoon baking powder
3 drops liquid Sucralose(I use EZ-Sweetz brand)
1 Tablespoon Sugar Free Vanilla Syrup(I use DaVinci)
1 large egg
1 teaspoon heavy whipping cream
1 teaspoon butter
1/16 teaspoon cinnamon

*Sweetened whipped cream optional*

Instructions:

In small bowl mix egg, cream, sugar free syrup and liquid Sucralose. Add coconut flour and baking powder. Mix until smooth. Let rest for 5 minutes.

Slice your apple into very thin pieces. Set aside.

In a small frying pan, melt butter on high heat. Sir in cinnamon. Lay down your apples and let cook for about 25-30 seconds. Pour in pancake batter and smooth over. Cover then turn down heat to LOW. Let cook for 3 minutes.
Take off lid and flip the pancake. Put cover back on and cook for 1 minute longer.

Can be served with sweetened whipped cream(nutritional information does not include this)

Carbohydrate, total 11.07 g
Sugars, total 5.26 g
Fiber, total dietary 3.96 g
Protein 8.03 g
Total lipid (fat) 11.29 g
