Default Blueberry Sauce

We had a house guest last night and I served my Lobster Dien Bien recipe: http://buttoni.wordpress.com/2010/0...rimp-dien-bien/ along with Bawdy Wench's Cheesecake for dessert, topped with this sauce. Mmmmmm Bawdy, it was real good! Glad I finally got around to trying it! And the blueberry sauce went so nicely with it: http://buttoni.wordpress.com/

I like berry toppings on my vanilla cheesecake and make this sauce for just such occasions. This would also be good on low-carb vanilla ice cream, vanilla cake or a coffeecake.

INGREDIENTS:

1 ½ c. blueberries (I used frozen)
½ c. water
24 drops liquid Splenda (or to taste, so add slowly and taste)
1 packet unflavored gelatin (or thicken with several dustings of xanthan gum)

DIRECTIONS:

Place berries and water into small saucepan and heat over med-high heat. When hot, add gelatin powder and stir to blend well. If you prefer, you can use xanthan gum to thicken, dusting lightly over surface, whisking well after each addition. Will take about 1/4 tsp. total to get it thick enough. Add Splenda slowly until you reach your desired sweetness level. Continue heating until it begins to thicken. Chill in fridge or over bowl of ice until starts to get thick. Serve over ice cream, cheesecake or coffeecakes.

NUTRITIONAL INFO: Makes 8 servings (about 3 T. per), each containing:

18 calories
.19 g fat
4.46 g carbs
1.04 g fiber
3.42 g NET CARBS
.13 g protein
.5 mg sodium

Button1,You read my mind I had just told my dh I wanted cheesecake with berry topping.lol.Wondering if you could use strawberries?

I've made lowcarb crepes before with a similar sauce, but used some of the Smuckers SF blueberry syrup (in my store it's with the pancake syrup) along with real blueberries, to give it some goopiness.

I have also made something similar- it's amazing on cottage cheese or greek yogurt too.

Sure! Any berries would work, Gracie. I used the tiny wild blueberries I bought at a Sprouts Market 30 miles away. I can't get those locally, only the regular large common blueberries.

Robin, I never thought about this type of sauce on Greek yogurt or cottage cheese, but I'll be that would be good. I'm not personally fond of yogurt or cottage cheese. I only use them in cooking recipes.

I have some of the Smuckers syrup, too, Gwynne! And I use that sometimes too for a quick sauce. We like it a lot.
