My first batch ever is in the oven right now. I did half a batch because I'm the only one lc'ing here, and I'm holding out for a sale on cream cheese.

I really like the kind of cheesecake that's ever so slightly lemony so I used lemon extract instead of the vanilla. I think they will be good. I tasted the batter and liked it a lot! (I have my own hens and don't really worry over salmonella)

Default quick question

Do any of you use actual sugar with these? And what's the least amount of sugar you can use? The reason I ask is I deeply dislike the taste of Truvia and other artificial sweeteners, but obviously I'm not going to go crazy with refined sugar. So 1 teaspoon? 2 teaspoons? It must need some sugar to create the chemical reaction when baking.

I deeply love baking so that's one thing I've missed while LCing. I have made non LC treats for others, but selflessness can only go so far!

Have you tried Xylitol or Splenda? I hate the taste of stevia too.

I used Splenda. You honestly don't even taste it. Oh, and these things are absolutely incredible cold. Like, I want to eat all of them RIGHT NOW!!!!

I used to make these weekly..and that was when I was loosing consistently. Time to make another batch.,,they are best IMO eaten cold. I don't really care from them right out of the oven..But eaten the next day COLD with my coffee..YUM!

These were great! I put some chopped walnuts in the bottom for a crust and it worked.

Being primal I only sweetened with some low sugar jam (locally made, 1/3 a cup) and it was great, if a bit "wet." Will continue experimenting; my taste buds are so sensitive I don't need much of any kind of sweetener, and I think some actual fruit might do better than the jam.
