My grandfather used to always say, "The truth will find its way". Maybe we're starting to see the real truth about dietary fat.

I hope this all becomes public knowledge before the diet police become a reality. With all the talk in the media about "Obesity this" and "Obesity that" there is a real possibility that punitive measures be instated towards foods that are considered fattening. Right now, fatty foods are considered fattening by the so called experts. This could mean taxes, rationing, or even bans on non-lean meat, full fat dairy, etc. This type of information is golden in the fight for our health.

Thank goodness another voice of reason in the media!

The James Beard award for those two books will surely help the cause among professional chefs. In theory, that means that the news about fat will slowly trickle down the food chain to common folks. It may take a few more years, but I see progress already. It gives me hope.

I dunno, at a nice restaurant I went to recently they served me Seared Pork belly. It was fabulous!

Yeah, that or carnitas is my fav meal. The best cuts come from sows as boars can have a gamey flavor
