Default Coconut-Cream Cheese Cookies

I've made these twice and I really like them

8 oz. Softened cream cheese
1 1/2 C. unsweetened coconut
1/4 C. Coconut Oil
1 Tbsp. Vanilla
2 Tbsp butter
1/4 c. chopped nuts (I used pecans, but it's your choice)
Sweeten to taste.
First time I used Xylitol, this time splenda and find that I prefer the xylitol.

Mix all ingredients together and drop by spoon on buttered cookie sheet. Bake ~ 350 for 20 minutes.

The consistency is like an oatmeal cookie and this batch makes from 20 to 24 cookies, depending on large you make them. They're filling, satisfy your taste for a treat, and are a good way to get in some good fats. I lke mine sweet but not to sweet.

There is a recipe for blueberry muffins made something like this. I am going to try them in a few days. Thanks for the idea.

They sound good, but do not sound low carb. Cocunut is naturally high in carb even if it is unsweetened. Do you know the carb content of the entire batch? I like to figure the carb content of the entire batch, then divide it by how many servings it makes, sense size can vary.

I don't have the recipe with me (sh-h-h-h! I'm at work). but I figured the whole batch at about 28 grms. of carbs. With this last batch I got about 20 to 24 cookies (sort of small ones - the way you drop them is how they come out-they don't spread out or anything).

I'd be willing to bet that cocoa butter in place of the coconut oil would be a nice twist

Coconut isn't high carb, IMHO. It is mostly fiber.

Nuts, coconut meat, dried (desiccated), not sweetened 100 gram: 24 carbs (16 fiber) -- 8 net.

I'm not sure how many oz of coconut that a cup and a half would be, it's not dense when it is shredded.

Coconut flour is pretty useful for low carb baking.

Sounds good, but I L-O-V-E the taste of coconut oil so much I don't think I could give it up for the cocoa butter. But if you try it let me know how you like it.

I made these tonight but used olive oil because my coconut oil was solid ( ). They came out pretty good but they fall apart. I'm going to see if they firm up overnight in the fridge.

I halved the recipe. The coconut I used was 16 carbs (1/2 of which are fiber) for .75 cup. I got 10 cookies out of it so that 1 carb/cookie just for the coconut. (I think my math is correct). I forgot to add nuts so the only other carbs would be from the cream cheese and sweetener (I used Sweetfreeze so 0 there).

I've been MIA, so just now reading this. Surprised these fell apart on you, I've never had this problem, in fact mine are nice and plump - wonder if it was the olive oil. I wonder too if the Olive oil changed the taste. I really love all the subtle tastes these cookies have.
