Cobb Salad with Green Goddess Dressing
1/2 cup of full fat yogurt
1/2 cup of full fat mayonnaise (preferably homemade)
2T freshly cut flat leaf parsley
3T chopped green onions
1T fresh chives chopped
3T white wine vinegar
2tsp anchovy paste or 2 flat anchovies
1tsp fresh tarragon
salt and pepper to taste
2 garlic cloves minced
6 cups of chopped romaine
1 cup trimmed watercress
1.5 cups cooked chix breast, chopped
2 tomatoes cut in wedges
2 hard boiled eggs, cut into wedges
1 cup of diced avocado
1/2 cup of crumbled bleu cheese
prepare salad dressing, using a food process or immersion blender and blend until smooth. set aside.
for salad, combine lettuce and watercress and place in individual salad bowls.
on top of the lettuce, add chix in one spot, avocado next to chix,
place tomatoes and eggs around the plate, scatter bleu cheese.
drizzle salad dressing over salad.
