Default Quail egg stir fry with almond sauce

Make a sauce by mixing almond butter, unseasoned rice vinegar, dry white wine, soy sauce (or gf tamari), and chopped chives. reserve.

Hard boil some quail eggs, peel. reserve.

Stir fry a mixture of oyster mushrooms, bean sprouts, suey choy, baby bock choy, and onion. Use whichever oil you prefer (this I generally use cold pressed grapeseed oil). When these are almost done cooking add the whole hard boiled quail eggs and stir in some of the almond sauce. Serve with chopped cilantro on top if desired.

Regular chicken eggs chopped can be substituted. But I use the quail eggs mostly because I am able to get my little cousin to eat it since he thinks they are "cute".

mm sounds delish... I used to eat quail eggs quite a bit as a kid - I also used to think they were "cute" hehe...haven't had them in years.... I saw them in an asian supermarket a while back - haven't really seen them in the typical supermarkets.
