Default Rutabaga and apricot puree

Roast fresh apricot halves in the oven on a cookie sheet, or on the barbeque until soft and starting to turn brown. (brush with melted butter)

Steam desired amount of rutabaga until soft. Take rutabaga and apricot pieces and place in food processor. Add butter, lots of fresh mint leaves, and a sprinkle of cinnamon. Process until smooth and serve. A sprinkle of chopped walnuts on top is good.

Usually using 4 or 5 parts rutabaga to 1 part apricot works well.

Hope you like it kallyn. This dish is not something I would crave or anything, but to me its a very comforting side dish, especially when you grow tired of the same old thing...

girlbug2, yes I suppose so...it turns out like the texture of cauliflour mash with a similar texture.
