Great recipe! I fixed this with a few modifications using boneless skinless chicken thighs and minced garlic. I also added more Parmesan and used a combination of grated and shredded - probably about a half cup total. I used a foil lined 13 x 9 pan, pushed all the chicken thighs together, and pulled the edges of the foil up to keep everything together - the topping stayed on nicely. Served it over a bed of buttered spinach. Wonderful!

I love using this for chicken, fish, yellow squash, etc.

You can use any seasonings you like, including ranch dressing mix. You can also use any cheese you like... I am fond of Parmesan or sharp white cheddar.

It is easier to mix the cheese in but if you sprinkle the cheese on top and "broil" at the end... it makes a divine crunchy top.

I love putting this on tilapia fillets and recently I have been putting it on thickly, lengthwise, sliced yellow squash. Yum!

I made baked fried chicken that was awesome with chicken covered in mayo and rolled in spicy rice crispies. I would think crushed pork rinds would be a good substitute or addition to the parmesan cheese. I would think it would give the chicken more of a fried crunch.

This sounds lovely, I'm definitely going to try it out this week. Thanks.

Edited to ask:

Do you think this would be ok if it were re-heated in a microwave the following day?

(I'm thinking of making double and taking some to work for lunch the next day).

Thanks.

That's it.... I'm off to try this right now for dinner! Will let you know how I go.

YUMMO! This was delicious. I used thighs instead of breast and added chicken salt, oregano and sprinkled extra parmesan on the top for a crunchy finish. Delicious... and oh so simple!

I made this last night and it was delicious! I used boneless skinless chicken thighs and towards the end sprinkled them with parmessan cheese and broiled it for a few minutes and it had a nice crunchy top. I'm not sure how it'll stand up to reheating but I'll find out in a few.

hey I also did a variation on this...used Three Cheese Ranch dressing and did not put anything extra on top...used it straight outta the bottle.

I think the cheese in the dressing made it get really brown on top ...yummmmmmmmmmmmmm.

I made this last night. It was so freakin good. I didn't even want to share with my hubby and daughter but ofcourse I did.
My daughter loved it and she doesn't like anything I cook (very picky eater).
This recipe is definitely a keeper!!

Tried it yesterday and thought it didn't taste like much... just chicken. The topic was good, what there was of it, most of it seems to have melted away in the first few minutes of cooking.
