Polish Sausage w/ Vegetables and Parmesean Cheese
Hi everyone!
I think this fits into the LC way of eating pretty well. Hubs and I used to eat it with white rice but this is JUST as good without it. I also kind of throw things in the skillet with this, so there are no measurements--hope you guys don't mind.
1 bag frozen broccoli florets
1 sm. bag frozen carrot slices (I add significantly less carrots to this since we are doing Atkins, but you can just use broccoli and it's just as tasty)
1 polish sausage
oregano
garlic salt
parmesean cheese
Cook the bag of carrots as per directions on the bag, then add broccoli (I usually add the carrots in first as they seem to take a bit longer to cook). Meanwhile, cut the sausage into small slices. When veggies are fork tender, add in the sausage slices. Sprinkle garlic salt to taste, as well as oregano. Just before serving, sprinkle as much parmesean cheese as you wish.
I hope you all like this--its one of our faves, and overall I think pretty carb friendly.
