Hot Breakfast Cereal
This is something I just came up with, as I was really wanting a comforting hot "cereal".
1/2 cup wheat bran fiber
1 tablespoon ground flax
4 oz. coconut milk (add a little water as needed)
1 tablespoon coconut oil
1/2 tsp. vanilla extract
a pinch of cinnamon
2 tablespoons chopped walnuts or pecans
2 packets Sun Crystals (or other erythritol sweetener)
Cook it all together and enjoy a rich, sweet and delicious "cereal"!
The net carbs aren't high at all. It is about 27 total and 10 net.
