Default Field Greens Soup

So, I decided to try something "gourmet" and bought a big box of field greens instead of my usual romaine for salad. Well, turns out...I'm not a fan of raw field greens.

What to do with this box of salad? Turn it into soup, of course!

454 g (16 oz) field greens
1 + 2 cups chicken broth
1 can mushroom stems/pieces, drained
1 lb ground sausage (I used spicy/hot...and the spices really came thru in the flavour of the soup)

Put all field greens in large pot with one cup of chicken broth. cover, and cook on medium until greens are cooked down (like cooked spinach). Stir occasionally.

While greens are cooking, brown sausage in separate pan.

When greens are cooked, add can of mushrooms. When sausage is cooked thoroughly, add sausage. (I poured the whole pan in, grease and all...you can also de-glaze the pan with some chicken broth to get all the sausage flavours too)

Add the remaining chicken broth and cook until heated thru. I served mine with a very generous helping of grated parmesan cheese. (the cheese got all melty and good)


I just might "accidentally" buy more field greens from now on!
