Default Yummy Peanut Butter Chicken!!!

Hi there!

I don't know if there are any similar recipes posted, but I just made this today, and I thought I'd share, since it was such a hit... Even my non-low carbing family loved this dish!


Peanut Butter Chicken


Ingredients:

5 Bonesless/Skinless Chicken Breast (cut into thin strips)
Sugar Free/Salt Free Peanut Butter (organic, preferably)
2 ½ Cups Light Cream
Becel Olive Oil Margarine (0 carbs)
2 Splenda Packets (or Stevia)
Sea Salt, Ground Pepper (to taste)
Plan, Unsalted Peanuts (optional)


Preparation:

Chicken:

In a large pan, on medium heat, melt Becel Olive Oil Margarine. Add chicken strips, sea salt, and ground pepper. Grill chicken strips. Make sure chicken is cooked thoroughly!

Sauce:

In a separate, small, sauce pan, combine 2 tbsp. margarine, light cream, Splenda (or Stevia), salt, and pepper). Stir well. Simmer on low heat and sir frequently.


Begin preparing the chicken strips. As water is cooking down while grilling, begin preparing the sauce. When chicken is starting to brown, lower heat, and add sauce to large pan. Immediately, add approximately 5 large tbsp. peanut butter to large pan. Stir chicken, sauce, and peanut butter well, until creamy. (If mixture is too thick or dry, add more light cream until sauce is smooth and creamy). Add a couple handfuls of peanuts. Stir well again.

When serving, top dish with a few peanuts (optional).

Enjoy!

Ooooh..... I made this again yesterday, but this time after everything was thoroughly combined and cooked, I put the whole mixture in a buttered glass baking dish and pooped it in the oven, under the broiler for a few minutes. Ummmm..... I got a nice peanut butter top crust... heavenly!

And I lost a pound today after eating a small/medium portion of this chicken yesterday!!!

Okay, that was just what I needed to read! That sounds soooo good! When we eat at the Chinese restaurant here, I always get the Peanut Chicken. Thanks so much for posting this! Now I know what to make for dinner!

Do you have the carb count for this?

Not induction-friendly, but might be good for a bit further down the road. (I'd use butter rather than Becel, though)

Pennink,

This is the carb count as per the products I used at home:

- 5 Bonesless/Skinless Chicken Breast - 0 carbs
- Sugar Free/Salt Free Peanut Butter - 2 carbs/tbsp
- Light or heavy cream - 1 carb/2 tbsp
- Becel Olive Oil Margarine or butter - 0 carbs
- 2 Splenda Packets - 1 carb each
- Stevia - 0 carbs
- Plan, Unsalted Peanuts - 4.6 carbs/oz.

As you can see the carb content in the total dish will vary depending on how much peanut butter, cream, and peanuts are used. That's the great thing about the dish - you can either have a rich creamy peanut butter sauce coating the chicken or you can just lightly coat the chicken if you need to lower your carbs... Either way is very yummy and a great substitute for Chinese or Thai food.

- Oh and this makes a big portion - I'd say 2 servings!

.....You're right, this recipe isn't really suitable for Induction because of the nuts as per Atkins' rules. Oh, and butter would be devine in this dish!

i will plug it into myplan recipes if I make it... it sure appeals to me!!!!

i wonder if you could do this with a macadamia nuts... mmm, or cashews... make your own 'butter'

AWESOME AWESOME RECIPE!!!

I added mushrooms and spring onions, plus I used butter and full-fat cream. My husband agreed it was a keeper and even my little ones loved it. This will definitely be on rotation in our house.

OMG I am totally making this soon!! I looooooooved the peanut butter chicken on the chinese buffet here - it would be so great to have a LC version!!

I want to make this but I only have chunky peanutbutter. I guess I will try it, I'm cooking for myself, so a few more carbs won't kill me.

I made a variation today...I had some plain, salt n' pepper chicken wings in the fridge that I was so bored with... so I heated up some chili flakes in olive oil....added some PB and a splash of hot sauce...bit of salt, plus the pre-cooked wings...heated the whole thing through and then poured it onto a plate with the pan juices over the wings......YUM!

Next time I'll sprinkle on some shredded coconut.

I have to say again... I cannot adequately describe how good this is.

I am fast losing count of how many times I've made this dish. I'm having guests over on Sunday night and this is what I'm serving.

If you can picture Homer Simpson with his head tipped back doing that drool thing, that's me when I eat this delicious recipe.
