Default Pumpkin Muffins

These are great for anytime, but will make a really good breakfast type muffin.


1 and 1/2 cup Golden Flax Meal
1 tsp each baking powder and Baking soda
1/2 cup Splenda
2 tsps pumpkin pie spice
3 eggs
1/3 cup oil
1 cup 100%pure pumpkin
1/2 cup chopped walnuts
1/2 cup water

Makes 12 muffins

Mix dry ingredients together, mix wet ingredients, then combine them and let sit 5 minutes, stir again and fill your pam sprayed muffin tins 3/4 full.
I baked on 350 for 40 mins.
I made these this week-end and very yummy and pumpkinny

i just mixed all this and can't find my muffin pans. is it safe to use a bread pan and make a pumpkin bread out of this?

I'd go for it!

I'd cut them into slices after its cooled and freeze them in portion sizes.

yep it came out yummy! thank you for the recipe! I'm going to put some cream cheese on the bread and pretend I'm eating pumpkin rolls.... soo good!!

I made these last night, too. They're really good. For those of you wondering (I know I was) I did a carb count:

Calories: 2449 (208 each)
Fat: 197 (16 each)
Carbs: 137 (11 each)
Protein: 73 (6 each)
Fiber: 51 (4 each)

So 7g net carbs. A little higher than I would like carb-wise, but they make for an awesome change, and I was looking for a way to add fiber and this is wonderful! Thanks for the recipe!

I halved the recipe, made it in a bread pan and came up with this: (for 6 servings) I omitted the walnuts.

Cals: 876 (146 cals each)
Fat: 64g (10g each)
Carbs: 53g (9g each)
Fiber: 25g (4g each)
Protein: 29g (5g each)
Net carbs: <5g each.

Thanks Robin! I'm not sure how many carbs could be cut out here with ommitting the walnuts and exchanging the splenda with the no carb sweetner sweetzfree?

You're welcome I was curious myself. I thought about using Sweetzfree, but I was afraid we needed the bulk of the powdered. Still, if you take that and the nuts out, here's what you get:

Calories: 2042 (170 each)
Fat: 162 (13.5 each)
Carbs: 107 (9 each)
Protein: 61 (5 each)
Fiber: 44 (3.7 each)

That brings it down to about 5.5 net each (just under 9 total). Better, but still not something I'll eat every day. (Although I ate two today! )

I only had the packets of splenda so I used about 20 of the little packets, and used them in my counts. It was much less than what the recipe calls for but it came out wonderful!

I made these yesterday and they were great. I did not include the walnuts (because I didn't have any) and I used Sweetzfree in place of the Splenda. They came out great! Next time I may add a bit more pumpkin spice to give it a teeny-bit more kick.

I made a yummy icing with soft cream cheese mixed with a splash of spice blend DV. YUMMY!
