Turkey with stuffing!
I like turkey but find that having it makes me want stuffing, so I've avoided it lately. Then I had a moment of inspiration after making the last batch of revolution rolls. I've changed my Rev Roll recipe - using mayo instead of ricotta and baking them in a muffin top pan, to give them added height and they are phenomenal! T-Man on the ALC forum posted his Rev Roll recipe and photos and I just had to find out what he did differently and they are the best ever!
So.. I wanted turkey with stuffing and here is how I did it:
Two turkey breasts
Season with a mixture of:
1 tbsp melted butter
1 tbsp chicken stock
1 tsp diced celery
1 tsp diced onion
1/4 tsp sage
1/4 tsp thyme
1/4 tsp poultry seasoning
dash garlic powder
salt and pepper to taste
Coat the turkey breasts with the mixture and either pan fry, bake or grill.
Stuffing - (4 servings)
4 Prepared Revolution Rolls - diced
(I diced mine and let them sit for a few minutes in the air to firm a little)
Prepare the following in a large mixing bowl -
3 tbsp melted butter
3 tbsp low-sodium chicken stock
1 tsp thyme
1 tsp sage
1/3 tsp poultry seasoning
1 tbsp diced celery
1 tbsp diced onion
dash garlic powder
salt and pepper to taste
Fold the Rev Roll cubes into the mixture until well coated. Spread into a loaf pan and top with small pieces of butter. Bake at 350 degrees for 10 minutes.
I count each serving of stuffing as 2 carbs, to cover any hidden carbs in the spices as well as the tiny amount of onion and celery in each serving, though the amount eaten is minimal at best, better to be on the safe side!
It was so good!!
Now of course, those that are into "giblets" can add them to the stuffing recipe and add other seasonings to suit your own mood.
Add a slice of SF cranberry jello to the plate for a fantastic "comfort food" meal!
