I am one that came to this diet only eating green beans, corn, and potatoes. Broccoli if it was covered in some kind of chinese sauce.
Now I am eager to try different veggetables made in different ways. I am still scared to make them, Im strange like that...if its something new I have to build up to try and make it...but I am always wanting to try different ones.
Now I have at least quadrupled my list of veggies that I will eat!
My suggestion is to really think about what kinds of veggetables you like, some you didnt really think of because we use them more of a spice than anything (bell peppers, jalapenos).
Think of new ways to prepare the ones that you do like, and the ones that you dont like. Look for recipes or try to mask them in things. I dont particularly like radishes but I have tried them in a few different recipes. One way I can eat them is to cut them kinda small and place them in my salad, the dressing masks the flavor but they make a nice little crunch in my salad which I like and I know that I am eating healthier just by adding an extra vegetable.
One recipe that I absolutly LOVE (and was intimidated to make at first, and quite frankly it sounded strange) is this one....
Parmasean Vegetables. It says broccoli, but acctually I go to Krogers and pick up their carrabean blend frozen veggies and make it with those instead. Its a blend of nice veggies and they are SO delish made like that recipe. Ive never added the green onions though like it says, I didnt have any the first time that I made it and it was so delishious that I have just kept them out the entire time. Oh and I never add the nuts either, lol.
