Default Indulgent Baked Fish Stuffed With Crab

This was posted in another area and I thought I'd post it over here incase anyone was wondering what to do something new with fish.

Here's one of my favorite fish recipes:

1 serving.

1 6 oz Basa filet or any other thin white mild fish-thawed
6 oz fresh crab (it's not as nice if made with canned)
Fresh lemon
1/4 cup sour cream
2 tsp dry ranch dressing mix
cayanne pepper
Salt, pepper, assorted dried herbs of your choice (I use a Greek herb mix or Sandwich Sprinkle from Penzy's)
1 TBS grated parmesean-reggianno cheese (Please don't use the stuff in the green can)

Preheat the oven to 350

Mix the sour cream and ranch dressing mix together with a BIG pinch of cayanne. Set aside.

Rinse the crab well and drain. Squeeze some fresh lemon juice over the crab.

Mix the crab and sour cream mixture together. Be careful not to break but the big chunks of crab.

Rinse and dry your fillet. Cut in half. Sprinkle both sides with salt, pepper, and herbs.

Place filets on a baking sheet (lined with foil and sprayed with Pam--for easy clean-up). Spoon 1/2 the crab mixture onto each filet and top with 1/2 TBS parmesean cheese.

Pop in the oven and bake for about 25 minutes.

I have this dish at least once a week. Hope you like it!
