Default Pork Chops with Onions and Green Chile Cheese Sauce

Hi, I'm a newbie low carber, and for the last two weeks all we've had is broiled meat and veggies. (My husband was getting rather tired of that, so I spiced it up tonight). He really liked the sauce. If you have frozen green chile available, then that is the best, but canned Ortega brand will work pretty well. Enjoy!

Pork Chops with Onions and Green Chile Cheese Sauce

4 Thick cut boneless pork chops
1 medium onion, sliced into thick rings
1 Tablespoon Butter
2 cloves garlic, minced
1/2 Teaspoon each, Better than Bouillon paste, beef and chicken
1 1/2 cups hot water
1/4 cup heavy cream
1/2 cup frozen green chili if available, or 1 can green chilies, chopped
1/2 cup shredded sharp cheddar cheese
2 Tablespoons Mochiko, or other thickener (15 g. carbs)
fresh ground pepper

Heat oven to 350* Season pork chops with salt and pepper.
Melt butter in cast iron frying pan and brown pork chops over medium high heat until brown. Set aside. Add more butter to skillet if needed and brown the onion rings until they begin to soften, add minced garlic and cook about 30 seconds. Add green chilies and pork chops back into the skillet. Mix the two bouillons together with the water, and add to pan. Add cream and stir. Cover skillet and place in 350* oven for about 20 min. Remove from oven, and set pork on a plate, and cover with foil to keep warm. Place the skillet over medium high heat, and reduce the juice about half, sprinkle the cheese and the mochiko over the onions, and stir until thickened. Check seasonings, and serve the chops covered by the sauce.
