saratea, I don't think so. They are not on the Atkins list of allowed foods so they are not fit for induction.

I think it's hard to know if they are OK for induction, because I wonder if Dr. Atkins had ever heard of them? And based on his own concept of "net carbs" they certainly are a very VERY low carb vegetable. However, if you are still in your first two weeks of induction, you might want to avoid them just in case.

I miss having Dr. Atkins around to answer these questions for us!!

I doubt Dr. Atkins ever heard of them. I think they're okay. They are very low in carbs.

I finally tried them last night....make sure you rinse them well. The texture was a little squishy, but my, I felt like I was eating pasta! They don't taste anything but what you put on them...I made pink sauce: 2c alfredo sauce, 1 cup chicken broth, 1 cup pasta sauce, and a handful of parmesan. YUM!!! With meatballs made out of an italian sausage/ground beef mix.

Induction is about your amount of carb intake...I think these would be fine. I threw my bag away last night, otherwise I would tell you what the count was.

I'm hooked!!

The carb counts on the noodles I bought today is:

2 servings per package
1 serving=20 cals, 3 carbs, 2 fiber (1 net carb)

This is the one I get. Buy by the case and they don't charge shipping.

I didn't like them at first, but they grow on you.

Mashed cauliflower. It always comes out for me in a rice consistency.

Newbirth: How long do they stay fresh? I'm the only one that eat them, it seems like a lot of noodles.

Glad to find this thread. I just got some shirataki noodles and had no idea what to do with them (the instuctions are not in english). I am really looking forward to them...Think I'll do a chicken stir fry...Bit worried about the weight thing though, I'll keep an eye on it!
