Default COMFORT FOOD!!! Yummy Ricotta & Veggie Side!

Okay...this is my standby when I can't decide what to make. I LOVE this dish. I make it two ways...One with spinach, and the other is with brocolli. My husband does NOT like the one with spinach, as he doesn't like the consistency. It's a little too, how did he say?? "GOOPY" for him Those who like a little more bite to chew, might prefer the brocolli.

1 package of frozen brocolli or spinach.
1/2 cup ricotta (I sometimes use more...its soley a preference thing)
1/2 cup. shredded cheese.
1/4 cup. grated parmesean (optional)
2 tbs minced garlic (again optional, great with or without it)
Salt and pepper to taste. (I have found a do put a lot of salt in this dish to get it to taste how I like)
1/4 cup. margarine or smart balance or No calorie butter spray. (I use the butter spray...just take the sprayer off and measure into the cup)

Boil brocolli or spinach until tender. (I microwave mine sometimes too...eithers is fine)

Strain (if you use spinach, strain it really well!). Return to pan over med-low heat. Add all other ingredients and stir on stove until warmed thru and well blended.

Serve warm (although I love it cold too)

Very yummy and the best substitute I've found when I am craving the comfort of a bowl of macaroni and cheese!

I have made something very similar only using spaghetti squash. You cook vented squash in microwave till aldente....about 8 min. Then put all ingredients in a casserole and bake for 30. It would work in skillet also and resemble noodles.
