And the experiment has begun.

At 7pm I took 2 blood glucose readings the average being 92.

At 7:20 pm I had 1 1/2 lb cheeseburger with mayo and 2 thin slices of tomato on a 60g. low-carb (14 g carbs - 10 fiber= 4 net carbs) hamburger bun.

First and formost I was impressed by the taste and texture. It was absolutely delicious.

I will take readings at
8:20,(99)
9:30,(91)
10:20,(90)
and edit this post with the results.


Test Complete 10:30 pm

My blood sugar went up 7 and back down 9 in three hours time on 60 g. white bun.

I plan another test tomorrow using 102 g. white bread on 2 grilled cheese sandwiches

Way to go! Did your extended conversation with the baker indicate that this might be the same "water bread" process used by Simple Treat in Pittsburgh?

What I found out is that they are associated only by franchise. The franchise's are sold by NFL All-Pro linebacker and two-time Super Bowl champion from the Pittsburgh Steelers Robin Cole and his brother Eric Cole. From the information I got the Bakery in Squirill Hill that supplies your GNC bought the rights to make that recipe along with equipment and supplies. And as you can see from my numbers above it had little to no effect on my blood sugar.....and you were quite right .........the taste made it hard to believe it was true......I have 1 more reading to take but I'm con vinced already. I give it the Thumbs up!

If you dont mind me asking, what would 60 carbs of plain white bun have done to your level? Already planning a side trip to Wash PA. in the midst of making wedding plans in Pittsburgh. Thank you!!

A couple more things to add. This is setup like a wholesale bakery and it appears as if the majority of their inventory depends on what orders they have from the businesses they supply. I went directly to the source because the GNC had a broken refrigorator and didnt know when the new 1 was coming in. When I picked up my order today I asked her if she minded me buying directly from her and she said no but told me she needed a days notice in order to have everything I might want. She also said that in the near future that they will be opening a web site and I believe offering their breads online. She has my name , email address and phone # and will inform me when that happens.......I will then share it here for anybody interested.

I'm a little confused. It has gluten flour and vital wheat? O_o

I'm assuming they left the "gluten" out of vital wheat gluten or possibly a slight typo with putting both of those words on the ingredients?

Or maybe just a different type of gluten flour?

I even though it might be a wheat protein because certain wheat proteins have gluten characteristics to them.

I assume since they bought the rights to use this recipe they are not likely to want people to be guessing at it......lol

as an example here is the cinnamon raisin one:

water, gluten flour, Resistant starch(corn), vital wheat, soya, oat fiber, graham flour, flaxseed meal, whey low, raisins, yeast, honey, inulin, egg, olive oil, cinnamon, sea salt.

as you see same basic ingredients with some additions.


or maybe they purchace a flour mix to make these breads and this is the ingedient supplied to them.

Test #2 has begun.

At 6:30 am I took 2 blood glucose readings the average being 89.

At 6:45 am I had a 2 egg sandwich with mayo on 2 slices of low-carb (12 g carbs - 8 fiber= 4 net carbs) rye bread.

Taste and texture was consistant with the white bun. Again I was impressed.

I will take readings at
7:45,(99)
8:45,(92)
9:55,(90)
and edit this post with the results.

Test #2 complete.

I'm sorry I missed this question. First the 60g I mentioned was the weight of the bun. the carb that they are reporting is the 14 carb - 10 fiber= 4 net carbs.


Tom, to answer your question also I have not had regular bread or buns since May of 05 when my blood sugar was at its highest of 500.

What I was trying to test was what my blood glucose did in reaction to the 4 net carb to see the accuracy of the labels claim.

Normally 4 net carbs has minimal effect on my blood sugar much the same as eating the bun did thus I tend to believe thier count of carbs.

Hehe, actually I was wondering what would have happened to your sugar level if the 60 gram bun would have been of the regular commercial variety and not low carb. As someone who hasnt had occasion to measure blood sugar, i am unfamiliar with how much of a jump is a big jump.
