Default They Cauli Me Tatar Salad

1 small to med head Cauliflower, chopped into 2 inch peices
4 scallions, sliced thin
1 stalk celery, sliced thin
1/4 cup dill relish, drained well
2 tablespoons sweet relish
1 tablespoon white vinegar
2 tablespoons SF Vanilla Davinci syrup
1 1/2 tablespoon Frenchies honey dijon mustard
1/2 cup mayonnaise (not salad dressing)
5 eggs, hard boiled and chopped
fresh ground pepper to taste
salt to taste


put chopped cauiflower is covered glass bowl with 2 tablespoons water and microwave on high for 7 min then let sit covered for 5 more min.

then put the first 9 ingredients in a large casserole and mix gently to keep cauliflower from breaking into small pieces.

top with eggs and salt and pepper to taste
then fold in gently cover and refridgerate for 2 hours or so.


The tatar salad lover in your family will Yum this 1 up.

I had it with a broiled strip steak and fresh steamed green beans and I was in Heaven.

Oh ugh, picturing larry the cable guy is a good appitite suppresent for any diet.

This recipie looks really good though. I'm typically not a potato salad fan, but this one looks almost more like an egg salad dressing, yum

kevin.. with this recipe in mind.. i made a 'tater' salad with the cauliflower.. I didn't use celery (we never did with 'regular' potato salad), and used my mom recipe for the 'dressing' (mayo, mustard, salt, pepper, sweetzfree instead of sugar) eggs, green onion (although I would have preferred a sweet onlion)and dill pickle chunks.
It was awesome.. and even better the next day out of the refrigerator.. I even forgot (while watching tv) that it was not 'reg' Potato salad until i had to bite a larger piece in 1/2.. funny it was cauliflower..

I prefer sweet onions myself but when you concider the carb savings you get using green onions over regular onions it is a no brainer. Thats one of those choices that I just don't question.

I made this a couple of weeks ago for a bbq/party at my house and it was FANTABULOUS!!! I'm making it again tomorrow for a bbq at my sister's house. It's so yummy....I'm just getting so excited thinking about it!

Thanks for posting this recipe...I'm still getting into the habit of substituting cauliflower for potatoes....every time a new recipe "pops up" on my searches, a little light bulb goes off in my head "oh yea, you do *that* with potatoes too"...and now I can do it lc!! yay!

Love the name!! I would like to try it but I can't find any sugar-free relish or pickles. I'm hoping to find some pickling cukes at the farmers' market Saturday and make my own. Also I don't have any Davinci syrup. Any problem using splenda?
