Default Mascarpone pumpkin dish, for those who don't like creamcheese.

I have found that I don't like a strong cream cheese flavor in my desserts so I started using mascarpone cheese instead and it works wonderfully. You only need a little bit to get a lot of flavor so not only are you saving calories, you get a lot of cheese out of a small container.

Mascarpone Pumpkin Mousse

1 15oz can of pure pumpkin
about 2-3 tbsp mascarpone cheese (I add it in very slowly and adjust the flavor since it can overwhelm, add more if you really want to bring the flavor out)
about 2 tsp pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp nutmeg, 1/4 tsp cloves)
1/2 tsp of extra cinnamon or more ( if you like cinnamon like me )
about 6-10 packets of splenda ( really depends on how sweet you like it, adjust to suit your taste)
1/2 tsp vanilla extract (optional)
dash of salt

Mix it all together and it's yummy cold or warmed. To me it tastes just like pumpkin pie.
One of my favorite ways to eat it is with cinnamon almond thins.

That does sound great. Unfortunetly here marscapone costs at least 5 times as much as cream cheese and is harder to find

Dang, here I find cream cheese for about a buck and mascarpone for 2.50. Do you have a Kroger?

No kroger. Here a block of cream cheese is about $0.88 for walmart brand, while Marscapone is $5 for 8oz

I made it w/cream cheese. Is great. It's in the fridge cooling. I was thinken of adding an egg and cooking it. Wondering if would come out more like the pie texture!! Eitherway, yummo!

Well, I made this w/cream cheese as I stated. Is yummy..today I added a little LC syrup! Yummo!!!
