Default Quick Breakfast Microwave Quiche

In a microwave safe bowl, mix the following:

2 eggs
2 oz shrimp
1 oz crumbled feta cheese
1/4 c sour cream
S & P to taste

Microwave at full power for 2 minutes and then at 50% power for 8-10minutes. Allow to stand for 5-10 minutes before serving.

This recipe is quick and easy...two of my favourite qualities in a recipe. Oh, and did I mention DELICIOUS? Yummmm.

Never thought of adding shrimp to the recipe! Delicious! Thanks.

I made quiche a few weeks ago and instead of the high carb crust, I lined the quiche pan with very small canadian bacon slices being sure to overlap them. It turned out so well and the kids ate it all.

Default Any idea what I can subsitute for the shrimp?

Hi -

I'm allergic to shimp and I'm wondering what could be used to substitute for it in this recepie ? Thanks for any help or ideas.

bmcky - Use your imagination.

Diced ham (low sugar of course)
Crumbled Bacon
Ground sausage
Soy alternatives
Any left over meats from the night before
Change the cheese around to cheddar or what ever else you have on hand or have a craving for

Sounds good, love the idea of the Canadian bacon for crust on the quiche also.
