White Cake Cupcakes [Carbquik]
This is a heavily LC modified version of a recipe for simple white cake. I tried it and I thought it turned out better than any other cake-like creation I've made so far. The best part is that it's a small batch, so even if I eat a ton of it, it's not a killer. 4 grams of carbs per serving, 6 servings per batch. It can easily be doubled. - 1/2 cup splenda
- 1/4 cup butter
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cup CarbQuik
- 1/2 teaspoon baking powder
- 1/8 cup DaVinci syrup (I use vanilla, but I bet other flavors would be good too)
- 1/8 cup heavy cream
If you don't like things sweet, you can increase cream to 1/4 cup and omit the syrup. I made cupcakes, but if you use a small cake pan, grease it first. Use liners for cupcakes. - Preheat oven to 350 degrees
- Cream together the Splenda and butter.
- Beat in the egg.
- Stir in the vanilla.
- Combine CarbQuik and baking powder, add to the creamed mixture and mix well.
- Mix cream and syrup, then mix into batter until smooth.
- For cupcakes, bake 20 to 25 minutes.
