Default White Cake Cupcakes [Carbquik]

This is a heavily LC modified version of a recipe for simple white cake. I tried it and I thought it turned out better than any other cake-like creation I've made so far. The best part is that it's a small batch, so even if I eat a ton of it, it's not a killer. 4 grams of carbs per serving, 6 servings per batch. It can easily be doubled.
  • 1/2 cup splenda
  • 1/4 cup butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 cup CarbQuik
  • 1/2 teaspoon baking powder
  • 1/8 cup DaVinci syrup (I use vanilla, but I bet other flavors would be good too)
  • 1/8 cup heavy cream
If you don't like things sweet, you can increase cream to 1/4 cup and omit the syrup. I made cupcakes, but if you use a small cake pan, grease it first. Use liners for cupcakes.
  1. Preheat oven to 350 degrees
  2. Cream together the Splenda and butter.
  3. Beat in the egg.
  4. Stir in the vanilla.
  5. Combine CarbQuik and baking powder, add to the creamed mixture and mix well.
  6. Mix cream and syrup, then mix into batter until smooth.
  7. For cupcakes, bake 20 to 25 minutes.

Sounds great! do you think it would work as well with Atkins bake mix? I have some of that. Carbqiuck I would have to order.
