Healthy Raw Veggie Salad
When you really want to deplete daily calories, this is a good one to have around. I try to keep a container of this in the fridge for fast meals.
4 small kirby cukes chopped (not skinned)
3 stalks celery chopped
1 each: yellow pepper, red pepper, yellow squash, pear, ripe tomato=chopped
handful fresh flat leaf parsley chopped
few slivers of purple onion
handful of black olives
2 T olive oil
5-7 T of seasoned vinegar
fresh black pepper
1 garlic clove pressed
toasted sesame seeds for garnish
mix all ingredients of salad veggies in bowl
mix salad dressing in small dish to meld flavors.
toss salad with dressing, sprinkle with toasted sesame seeds, serve.
substitute sesame oil for olive oil.
substitute fresh chopped pineapple, or apple. (small portions go a long way)
add couple of ounces of crumbled feta if using olive oil dressing. (small portions go a long way)
add chopped walnuts, delete sesame seeds.
*makes about 4-5 meals.
