Default found a great low carb breakfast muffin recipe! good!

thought i would share a great low carb muffin recipe i found on a web site. it is high in fiber and protien as well. hope you enjoy it as i did.
6 tbsp butter or margarine
3 large eggs
1/4 c heavy whipping cream
1/2 c splenda
1 tbsp maple flavoring, or i used 3 tbsp s/f maple syrup
1 tbsp vanilla or almond extract
2 tbsp cinnemon and or allspice for extra flavor
1 c flaxseed meal
1/4 c soy flour
3/4 c wheat bran
1/2 tsp (rounded ) baking soda
1/2 tsp (rounded) baking powder
cream first 7 ingredients together, add your dry ingredients, may even add
diced up low carb fruit or nuts
spray baking cups to prevent sticking, and fill about 3/4 full.
bake at 375 for 15-20 minutes depending on your oven, mine are perfect at 17 minutes. top with what you desire. i made cinne'butter, yum! dont have exact nutrition facts but remember they were like 2 carbs per muffin !

I've been using this recipe as well. Don't remember where I found it.
I did tweak mine by experimenting a little.

I thought they were a bit greasy, so only used 3 tbsp butter. I also use only 1/4 c. half-n-half and 1/4 c. water to cut the fat and calories a little. I don't use soy, so I subsituted almond flour ( or just added extra flax), and I always add a few chopped nuts. I've even added a bit of pumpkin, or a bit of grated carrots. I guess the possibilities are endless!

I make these 12 at a time and eat at least 1 a day. Love 'em. They are much better cold than hot or warm.
