Default Chocolate Rum Pots

A very simple and easy recipe, which tastes divine



Chocolate Rum Pots

Ingredient amounts per person (serving):
(just multiply the ingredient amounts by the number of people to be served).

25g/1 oz Sugar-free (Low Carb) Chocolate
100g/4 oz Mascarpone
1 tsp dark Rum

Break the chocolate into small pieces in a microwaveable bowl, and then gently melt in the microwave. Add the mascarpone and rum, and heat for a minute or so on a medium setting. When the mascarpone is fairly ‘liquid’, stir mixture thoroughly and then pour into a ramekin, or similar dish. Chill in the fridge for several hours before serving.

Alternatively (if you don’t have a microwave), break the chocolate into pieces and put them in a heatproof bowl over a pan of barely simmering water. Add the rum and mascarpone, and then leave until the all the ingredients have melted. Remove from the heat, stirring well before pouring into a ramekin and chilling in the fridge.

Per serving: 631 cals, 60g fat, 5g carbs, 8g protein *

* Please note that the nutritional values are for the particular brand of chocolate and mascarpone that I used - make sure you check the nutritional values of the ingredients you use, in case they differ from mine.
