Default Cheesy chicken & spinach roll-ups

Suitable for Atkins Induction

Serves 1

1 medium chicken breast fillet, bashed as flat as possible
*50-75g (2-3oz) cream cheese, softened
50-100g (2-4oz) frozen spinach, thawed and squeezed dry of as much liquid as possible
25-50g grated cheese - I used cheddar

Mix the cream cheese with the spinach, then spread as evenly as possible onto the flattened chicken. Roll the chicken up, then slice into approx 1 inch lengths. Place the chicken roll-ups on a baking tray, mashing them down a bit with your fingers if necessary, so they are all the same height. There is no need to use toothpicks to keep them together.
Sprinkle grated cheese on top, then bake in a moderately hot oven for about 30 minutes.

*Exact measurements are not terribly important in this dish.
Many other bits and pieces can be added to the chicken's "innards." For example, toasted pine nuts (when off Induction), chopped cooked bacon, ham, or prosciutto, etc. Let your imagination rule.
