Thumbs up My Mom's Cole Slaw

This is my Mom's Cole Slaw recipe.

Dressing:
Shake together in a jar:
1/3 cup wine vinegar
1/3 cup oil
2 packages Splenda

Pour Dressing to mix of:
1 shredded cabbage
2 shredded carrotts
1 chopped green pepper
4 chopped scallions

Stir in a few tablespoons of mayo to cole slaw to make creamy. I hope you enjoy this recipe.

Default My Mom's Cole Slaw

According to my calculations, it's about 7 carbs per cup. As a side dish, 1 cup of cole slaw is a lot.

I hope you enjoy it. I'm planning to make a batch this weekend. YUM!

to make the dressing creamy without adding mayo, you could always drizzle it slowly into your blender. That will whip air into it and it will become thicker and creamier.

Default a creamy cole slaw recipe

Here's recipe I really like:

mix with a whisk:
about 1/2 cup mayonaise
about 2 T heavy cream (may vary according to desired thickness)
about 1-2 T apple cidar vinagar (to taste for tartness)
1/2 to 1 packet of splenda (test for desired sweetness).
whisk it to a creamy consistancy. If too thick add more cream. If too thin add more mayo.

mix with your favorite cabbage mixture.

This really does taste like the real thing with practically no carbs in the sauce part.

Have you guys tried broccoli slaw? Shredded broccoli. Makes a good coleslaw, lower in carbs, I think.

A friend of mine worked at popeye's chicken and their coleslaw is:

one yellow onion
one head green cabbage
two shreddet carrots
mayo to make creamy
1/4 cup sugar

and are you ready for this? finely chopped dill pickles (about six to eight for each head of cabbage). THen it usually sits for 24 hours before serving.

I understand they expand this recipe to make huge batches, but this makes a great coleslaw.

I make this same recipe, but omit the carrot, and use splenda instead. YUUUUUUUUUUmmmm with fried chicken or wings!
