Default Cream of Chicken Soup

Please forgive me if this has been posted already. I just made it and it was quite good and wanted to share.... Do you think this could be frozen with good results?

Cream of Chicken Soup

3/4 cup cooked chicken or turkey chopped or shreadded
1 cup chicken broth
1 stalk celery, chopped
1/2 small tomato, chopped
2 tablespoons heavy cream
2 tablespoons cream cheese
sprinkle of salt and italian seasoning.

Simmer chicken, celery, salt , italian seasoning, and tomato in broth untill celery is tender, then add the cream cheese and stir 'till combined. then add heavy cream and bring to a simmer.

You could use whatever you want. I think homemade would taste best, but a good store brought broth will be just fine.

I've never tried it, but from what I hear, it's best to freeze everything but the dairy. Add the cream and cream cheese once it's thawed.

i tried a variation of this last week while playing hookie from work--used a can of beef broth, about 1/4 cup onions, and about 2 tablespoons of cream cheese. simmered the broth and onions about 5 minutes, then added cream cheese and simmered a while longer. it reminded me of french onion soup!!! it was delicious and so easy.
