Chicken and Sausage stir fry
A nice 1 pan meal for a busy day.
1 package (4 pieces) boneless skinless chicken breasts
1 package Ekrich Smoked Sausage (lowest carb of them all)
1 package frozen broccoli
fresh bean sprouts
1 can bamboo shoots, drained
2 T olive oil
2 cloves fresh garlic, peeled and mashed with a knife
1 tsp. basil
2 tsp rosemary, finely crushed
In a large non-stick skillet or Cutch oven, heat olive oil, add garlic and sautee till just golden. Cut chicken into bite sized pieces while it cooks. Add chicken and spices, and cook gently. As chicken is cooking, slice sausage very thinly. When chicken is nearly done, stir sausage in.
As chicken is nearly done, add frozen broccoli. Simmer on medium heat until broccoli is tender. Add bean sprouts and gently cook till desired tenderness. Add bamboo shoots and heat thoroughly.
Serve and enjoy with a salad. We like Greek Salad with this.
Nice meal for 3 or 4, or make and save some for tomorrow!
