Thumbs up Pretend Pasta

OK, I know this sounds crazy....

I was desperate for something even close to pasta...

I took a LC spinach tortilla (4carbs) and sliced it into very narrow "noodles". The brand of tortilla that I found are VERY moist. Anyway... I sprinkled them with a few drops of water and cooked them in the microwave for a few seconds, topped them with my LC alfredo sauce and parm. cheese.

To me it was great!!! But it's also incredible what you think is good when you are desperate

Canned green beans work surprisingly well, too; as do thinly-sliced 'ribbons' of zucchini. Just boil it for a few minutes, until tender. An easy way to get your vegetables in.

Dreamfields pasta is absolutely delcious. Tastes identical to real pasta. Stay away from the atkins brand pasta, its gross!!

Another one that I sometimes use is the angel hair coleslaw (the kind that comes in a bag). Just wilt until crisp/tender in a saute' pan with a dab of olive oil. Yum!
