15 ounce container of ricotta cheese...
1 packet of sugar free chocolate pudding "mix"
1.5 or 2 packets of splenda - choice on sweetness is yours

SF Chocolate pudding mix probably isn't all that low carb. Think it has 26 carbs per package? So ifyou're good and don't eat the whole thing, you're probably ok.

It would be a little high in carbs for me, but I'm sure it's good!

this is so good that just a few tablespoons will TOTALLY satisfy any sweet/dessert craving... well... let me say it did it for me!

and non-lowcarbers will love it too... so it could be something to share with them and you can enjoy it with them. (we just can't eat as much.)

does this need to set in the fridge for a while before serving, and how long do you mix it??

not really...

well... let's just say... i didn't wait!

my one suggestion though is to perhaps add more than just a little heavy cream to ease the mixing and make it smoother.

please... if you make this... let me know how you liked it!

I made it, and I loved it! Next time I will put extra heavy cream in because the texture was a little heavy for me. But just two tablespoons killed my pms sugar craving! My mother tried it, she loved it, she compared it to mousse. She didn't even know it was Low Carb!

to lower the carb count maybe try cocoa powder in place of the pudding mix, the ricotta is already giving it some weight so i don't see why it would not work. i make "banana pudding" kinda like this--mix ricotta and cream cheese together, add banana flavoring and some splenda, chill and eat!
