Default Another Chicken Dish!

First, this is my first post in this forum--it REALLY reminds me of the one that was associated w/ "Low Carb Luxury". I'm SO glad to have found this place!

Anyways, to the reciepe:

5-6 Chicken breasts(I used the cheap indiv. froz. ones, thawed, cut up)
1 Bag froz. green beans, thawed and drained
8oz. portabella mushrooms, sliced then cut in 1/2
1 red pepper in chunks
1 zuccini(sp?) cut into chunks
1/2 c no-sugar orange marmalade
1/2 c atkins ketchup
onion powder
garlic powder

Simply layer everything except for the last 4 items into a disposible foil pan. Nuke the marmalade for a few seconds to melt, then add in the remaining, stirring well. Drizzle over the top of everything. Cover well with foil and put on a grill. Let it go for about 15 min, then stirr, and just continue to cook until the chicken is done.

I'm really quite proud of this one--It was one of my "experiments". The best thing about this for all of you who have families--2 teenagers, and a 7 yr. old loved it!

Next time, and I might suggest to anyone trying it, is to add the mushrooms and zuccinni towards the end--they got a bit mushy.

But this would adapt to whatever you like or, like me, what you had in the house.
