Default Mock Fettuccini Alfredo

This recipe was inspired by the Mock Mac and Cheese. I just happen to be a fettuccini alfredo lover and thought I'd try to adjust the recipe for those flavors. It tastes just like fettuccini alfredo but the texture is a little distracting. It's very rich so little bit goes a long way. If anyone has any ideas on how to make the Tofu a little bit less distracting I'd appreciate it.

Mock Fettuccini Alfredo

Serves 6
1 Pkg Extra Firm Tofu
1 8 oz Philadelphia Cream Cheese
1 cup Cream
1/2 Cube Butter
1 cup Shredded Parmesan Cheese

Instructions:
Mash Tofu with fork. Add all ingredients into a casserole dish, cover and heat in oven at 350 until all is melted together, approximately 25 minutes. Stir occasionally.

I don't know about the tofu, but I was just reading the cabbage lovers thread on this forum and I bet the sauce you made would be great over ribbons of sliced cooked cabbage.

Thanks for posting what looks like a very simple alfredo recipe. I will try this this week.
