Default Peanut Butter Frosting on Choc. Cake

On a whim last night after coming in from having dinner a restaurant where the desserts are completely off limits, I decided to throw together a cake using almond meal to see how it would come out. So I opened up my Betty Crocker cookbook to a devil's food cake recipe and just replaced the sugar with splenda and the flour with almond meal. It did not rise as much as a flour cake would but it was still pretty!! it really needed a frosting though, so again i took out the splenda, some natural peanut butter, and the heavy cream and whipped up a frosting--mmmmmmmmmmmmmmmmmm. It was so good....... I really have no clue what measurements i used, just kinda threw it together, but i don't think it would take too much to figure it out.

Hope someone else enjoys this as much as I did!

health food stores carry it. i think the brand i use is called Bob's Red Mill, kinda expensive but worth it for a nice little treat occassionally!

Almond meal and almond flour are just ground up almonds.

Almond meal is a coarser form of the two, the flour being finer. It's much cheaper to buy your own almonds (if you belong to a wholesale club like sam's or costco or BJ's they all carry them in their baking products isle). Just put them in your food processor or blender about a cup at a time and blend. You can also sift them to get the finer product out for flour and re-blend the coarser pieces. Keep the amount in the blender small as it will be hard to chop if there is too much in it at a time. And there you go.....a much cheaper and equal product. This flour make fantastic muffins!!!
