Chicken Surprise
Boned and skinned chicken breasts (1 per person)
Sliced Bacon (3-4 slices per breast)
Cream cheese with chives (make your own, or buy it already done for you!) (1-2 TBL per breast)
Pound breasts to 1/2 inch thickness
Plop 1- 2TB of cream cheese in center
Wrap up like a ball and then wind the bacon strips around the breast
Secure the wrap with toothpicks
Broil approx. 30 minutes- turning once
(a good friend always tells me: "Cook it until it looks like something you'd want to eat)
Yes, the cream cheese often seeps out a bit, but not too badly.
You might even try these with the skin still on!
Carb count per breast: only the cream cheese - 1 - 2gr
