I discovered Rowntrees sugar free jelly early on in my diet, available at most supermarkets . How about a real trifle - Makes 4 portions. Make one sugar free orange jelly and pour it over a small tin of mandarin oranges with the juice drained off. Then make some custard by heating half a pint of whipping cream, 3 eggs and a couple of dessert spoons of Splenda together stirring all the time for a few minutes until it starts to thicken. Once it;s cooled pour over the jelly (when its set obviously) and you get a really luxurious trifle for very few carbs. If the custard curdles you can rescue it by whizzing it up in a food processor.

Sounds good! How about some whipped cream on top and a sprinkling of toasted almonds to finish it off?

By the way I should have said Birds sugar free jelly not Rowntrees.

Dear newthsj,

I bought some short dated half price double cream today and wanting to use it up I decided to find your recipe for custard and have that on my rhubarb today instead of just the cream.

Your custard is GREAT!!! It is easily the best custard I've ever had!

Thank you so much for the recipe. Now I wonder what it would be like with cocoa powder in it...

I've made trifle using the almond sheet cake from the Tiramisu recipe. I especially like to make it in the summer when there are fresh berries available.

newthsj, your idea sounds yummy!

Oh man Karen. I hadn't seen the Tiramisu recipe yet. I'm a big fan of your Chocolate Truffles though, and having my own special "treats" helped keep me on the straight and narrow over the holidays

(I used pecans instead of macadamia nuts, very nice flavor too)
