Default Lemon Squares

I found this in my moms Stevia cookbook. I guess you could convert the Stevia to Splenda, I dont know how though?

Filling:
2 eggs
9 tsp. stevia blend
3 tbls. lemon juice
1 tsp. lemon flavoring
4 tbls. butter, melted, cooled
1 tbls. grated lemon rind

Topping:
4 oz. cream cheese, softened
4 oz. sour cream
1 tsp. vanilla
1 tsp. stevia blend

Crust: (Im putting this in here, maybe you guys can convert it, or just use your own crust? I was thinking about not using a crust at all)
5 tbls. butter
1 tbls. stevia blend
1 cp. flour

For crust:
In a bowl, beat butter and stevia till fluffy. Beat in 1 cp. of flour till mixture resembles course crumbs. Press into bottom of an ungreased 8x8x2-inch baking pan. Bake in a 350 oven for 15 minutes or until golden brown.

Topping:
Whisk all ingredients together. Set aside.

Filling:
Beat eggs and stevia; mix in lemon juice, lemon extract, butter, and lemon rind. Pour mixture into hot baked crust. Bake at 350 until lemon filling is set (about 20 minutes). While still hot, spread with cream cheese topping. Allow to cool, cut into squares. Makes 20.

thats for the crust. i make alot of pies without the crusts cuz the filling is low carb. i just put the crust recipe in cuz alot of people on here convert high carb recipes to low carb. im guessing you could probably use almond flour in place of the reg. flour.

I use pure stevia extract powder. How does that relate to stevia blend, any ideas?

Oh, this sounds wonderful!

I don't like stevia, so I will try to convert this to Splenda. Also I do think that almond flour would work nicely for the crust.

I am on spring break now, so hopefully I will have time to do some baking. I'll let you know if the conversions work out.

I just made almost the exact same recipe (but a low carb version) tonight. The crust tastes really good and the filling is not bad either.

Well, I finally made these! Yum! My whole family loved them, and none of them are doing low carb. My DH even ate 4 of them.

I did convert the stevia to Splenda:
Filling - 3/4 c Splenda
Topping - 1 T & 1 tsp Splenda
Crust - 1/4 c Splenda
I used almond flour for the crust instead of the white flour. It was excellent.
I got 16 squares - 2" by 2".

And here I am years later. I made this today to take to a dessert concert (fund raiser for the choir I sing in) and wanted something that I could eat. Made it with Spenda and Almonds in place of flour for the crust. It was TOO good - not something I would want to have around regularly.

I made these with almond flour instead of regular and used liquid splenda instead of stevia or regular splenda. I put this into Daily Plate and this is how it came out. Anyone else get anything different.

For 1 square

248 calories
24 g fat
3.3 carbs
1.1 sugar
1.3 fiber
5.3 protein

This is for 1 square. This recipe for me made 9 large squares.

This sounds delish. I'm trying your lemon square recipe today.
But I'm using oat and almond flour, and I'm replacing half the butter in the filling with applesauce.
