pork and coconut skewers
soak wooden skewers in advance in water to prevent burning
saute in olive oil
1/2 red pepper, very finely chopped
1/2 onion very finely chopped.
Add to pan1/2 tsp garlic granules
1/2 tsp turmeric
1/2 tsp ground ginger
1/2 tsp ground coriander
1/2 tsp ground cumin
cook a minute just to take the rawness off the spice.
Cool.
Add
1 egg
1 lb pork (ground) mince
2 tblsps unsweetened dessicated coconut
grating of block creamed coconut ( I used about 2 tblsps)
mix and form into balls, slightly flatten (makes 12)
refridgerate, then skewer immediately prior to grilling or barbecuing to your liking.
the block coconut and veg keeps the meat very moist and tender.
could add fresh chilli, other veg/spices as you like.
