I took a microplane grater and grated a little bit of bakers chocolate into the ice cream, it was really good. My bag was a little too big, so not everythign froze, used a little too much vanilla. I'm going to try grating a vanilla bean into it next time instead. Can't wait to try it with the mango syrup.

BeckyB, Here are the specifics regarding quantities of cream one should be eating during induction. I got this from Atkins.com. I guess the ice cream recipe is fine, but 1/2 cup is too much during this important phase of your food plan. HTH

Additionally, you can have the following:

Clear broth/bouillon (not all brands; read the label)
Club soda
Cream, heavy or light (limit to two to three tablespoons a day; note carbohydrate content)
Decaffeinated coffee or tea*
Diet soda made with sucralose (Splenda™); be sure to count the carbs
Essence-flavored seltzer (must say "no calories" and should not contain aspartame)
Herb tea (without barley or any fruit sugar added)
Lemon juice or lime juice (note that each contains 2.8 grams carbohydrate per ounce); limit to two to three tablespoons

I'm excited.. I'm going to try this!

for those of you that live near a costco or sams club.. I by my heavy cream there $7 for a 1/2 gallon... sounds really expensive compared to milk.. but I was paying TONS more when buying it by the pint if you add it up!

Be careful of costco Land o Lakes brand it has more carbs than regular heavy cream. I'm not sure why except when I read the ingred.

This recipe is great!

I used 1 T cocoa (unsweetened, Dutch-process) and 1 T Da Vinci SF Almond syrup...Chocolate Almond!

No it isn't allowed on Induction--too much cream. As has been posted here, during Induction cream is limited to 3 tbs a day.

The Tupperware suggestion was excellent!

Yum. Thanks.

Lucy

Add up the carb counts of the items you actually use, especially your sweetener choice and flavorings, e.g., cocoa or coffee. Voila, total carb count, then divide by number of servings. If you eat it all, 1 serving...
