Default Chocolate 'Rice' Pudding - REALLY!!!

The best comfort dish my mom ever made for me was Chocolate Rice Pudding. Up until recently - I would make and entire 9 X 13 inch pan full and eat it all myself within a few hours. When I began LC - I missed the rice pudding soooooo much. I was fooling around with recipies the other day and came up with something that is VERY similar to moms version, with 1/8 of the carbs !

100 grams Ricotta Cheese - drained
1 egg
1 tblspoon heavy cream
dash vanilla
cinnamon & Splenda to taste
pinch of cocoa

mix ricotta, egg, and cream till thuroughly blended
add vanilla, then cinnamon, cocoa, and splenda to taste

micorwave on high for 2-3 minutes, stirring once.

This makes a wonderful chocolate custard. The ricotta adds a texture which is similar to rice. Enjoy !

This is a bit higher in carbs - so not something to eat on induction. 1 serving has about 8.5 carbs. However, it is much less than the 65 carbs per serving of the traditional recipie made with white rice and sugar.

You can also halve the amount of Ricotta and add more cream.

I forgot - I used to flavor ricotta with splenda and it reminded me of rice pudding, too. Thanks for the reminder!

Default Rice Pudding

Rice pudding is one of my all time faveorites. I was fooling around with the Mock Danish recipie and tried Ricotta instead of the cream cheese and was pleasantly suprised.
