hi there,

Garam masala is an Indian mixed spice, not hot. Generally a blend of coriander, cumin, cinnamon, pepper, cloves .. and maybe cardamom and/or nutmeg. For the purpose of the recipe for the chicken thighs, if you don't have garam masala, then Chinese 5-spice powder will also work, although the flavour will be a bit different.
