Thanks to some wonderful soul at this website who told me about black soybeans, I was able to make some awesome chili - with beans!! It's easy and good. Here's the recipe:
1lb. ground beef
1 stalk celery, chopped/cubed (1ec)
1 sm. roma tomato, raw, diced (3 ec)
1 can black soybeans (3.5 ec - really!)
1 sm. can walmart mexican style tomato sauce (3.5 ec)
a bit of green pepper, less than 1/4 of one, chopped (1 ec)
a bit of garlic powder
potassium salt substitute
Brown ground beef. Add everything else. Simmer. Add a little water, to make it total 4 cups (doesn't take much water) This version is way spicy, but if you want mild just use 'plain' tomato sauce, and add seasonings as you like. Each cup has 3 effective carbs. I added a tablespoon of sour cream to a cup of this and it was great. With the sour cream, it's only 4!!
The thing you should know is that black soybeans are pricey, compared to other beans. I paid $1.79 for a can. I got them in the 'organic' section of Safeway. If I find them elsewhere, I'll let y'all know.
