"Good Calories, Bad Calories" is a deep dive into the science. You might want to start out with "Why We Get Fat" which I believe is the simplest and best explanation without being so challenging. Both are by Gary Taubes and both are well worth reading. It all depends on how much you want to challenge yourself.

DietDoctor is a great place start. The "Low Carb for Beginners" page (all of it excellent) ends with a Learn More section. The science use to be a separate section, so this placement is a bit less obvious, but very helpful with both written explanations and videos options.

When my husband had bypass surgery back in 1995 I took the hospital-sponsored class about how to cook safely for a heart patient - all low-fat of course! They stoked our fear of fat with pictures of shortening in place of real foods - especially meat. We went from fairly natural foods to a more artificial low-fat diet. Both husband & I craved breads & I went overboard on beans & lentils (still miss the lentils!).

Even tho he's never had to lose weight, we both do a lot better on low carb.
